District Executive Chef

Born and raised in England’s small seaside town of Weymouth, Dorset, Ryan Lister grew up a proud Southerner who nourished himself with proper home-cooked food. Between his grandma’s stew and dumplings, his nan’s Sunday roast, and his mum’s rice pudding, he could never get enough of the convivial family huddles around a table of delicious, love-laden food.

The joy and warmth that envelop him through those memories, together with the unrelenting support of his family, drive his contagious passion. Today, Ryan leads the kitchen brigades at over a handful of O&B restaurants including The Dorset, Liberty Commons at Big Rock Brewery and The Rabbit Hole.

Hailing from Bedfordshire, England, Rob Ratcliffe’s culinary journey began watching his mother find joy in preparing comforting meals for their family. This early inspiration ignited Rob’s desire to spread happiness through food, setting him on a path toward a fulfilling career in cooking.

With Michelin star training under his belt, Rob relocated to Canada where he flexed his skills in some of British Columbia’s top kitchens. Now settled in Toronto, Rob is delighted to infuse The Dorset with a dose of nostalgia, blending classic British flavours with fine dining flair.

General Manager

Born in Jaipur, India, Gagan began his career at the iconic Taj Mahal Palace in Mumbai, working as a butler for an esteemed clientele. After steadily climbing the ranks at several O&B restaurants including Leña, The Rabbit Hole and Canoe, Gagan now leads our dedicated front-of-house team as General Manager, curating memorable encounters from the moment guests walk through our doors.
